I have been craving these since I got back home from Colorado! However, I was never able to make them until now. I was a little worried, my family didn’t seem to think that they would be very yummy; but I made them yesterday, and now they are gone!!!!
These make a very soft cookie, and as you can tell from the picture on the left,
the cookies do not flatten as you bake them.
So, when you plop them on your cookie sheet,
feel free to squish them flat to ensure less cooking time.
Ingredients:1 cup canned pumpkin puree
1/2 cup brown sugar
1/4 cup sugar
1/2 cup oil
1 Tablespoon vanilla extract
2 cups flour
2 teaspoons baking powder
2 teaspoons cinnamon
1 teaspoon nutmeg
1/2 teaspoon salt
1 teaspoon baking soda
2 cups chocolate chips
Combine the ingredients in the order listed above.
*Bake at 350 degrees for 9-10 minutes, but my first batches were closer to 13 minutes. Let the cookies cool on the pan for 2-3 minutes before placing them on a cooling rack.
